What is the difference between sideral and tropical astrology?

also I’m trying to figure out my star/sun sign is Cancer or Gemini? My birthday is July 14th. I know that the Sun was in Gemini at the time so that would make it Gemini, but what is the TRUE/REAL sign I should go by?
